The eagerly awaited second location of Sebastian & Co., Vancouver’s most popular butcher shop, is finally open in downtown Vancouver.
With a worldly flair, and inspiration taken from the artisan butcher shops of Europe, Sebastian & Co. offers the very best quality meat available in the city, as well as local and imported charcuterie and cheeses.
Founded by former chef-turned-butcher, Sebastian Cortez, this destination butcher shop is known for immaculate presentation, a wide range of speciality meats, and small-batch, hand-crafted sauces and rubs. House-made burgers and sausages, duck confit, pates and terries are just some of the delicacies on offer.
One of the shop’s biggest highlights is the Custom Dry Aging Room, which can be seen through a window onto the street. The first of its kind in Canada, a window-facing Custom Dry Aging Room features entire ribs or loins that can be pre-purchased, tagged and dated with the customer’s name. The meat can be aged for as long as desired, and when a steak or roast is wanted, simply pop by and ask the butcher to cut what you want. Leave with a neatly-wrapped parcel of dry-aged meat, be it prime rib roast, porterhouse, t-bone steak, New York or ribeye.
The new downtown store also features craft sandwiches (including the South American inspired ‘El Chacarero’ – Sebastian’s house roast beef, crusted with the brand’s famous Asado-Inspired Charcoal Rub, fresh tomatoes, and pickled green bean pepperoncino slaw), a broth bar, and European-style Charcuterie Cones.
